  9. 1 tablespoon ginger-garlic paste
  10. ½ cup Kagome Tomato Puree
  11. 1 teaspoon red chili powder
  12. ½ teaspoon turmeric powder
  13. 1 teaspoon garam masala
  14. Salt to taste
  15. Fresh coriander leaves for garnish

Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.
  2. Heat oil or ghee in a large pot or pressure cooker over medium heat. Add cumin seeds, cinnamon stick, cloves, and bay leaf. Sauté until fragrant.
  3. Add the finely chopped onion and green chilies. Sauté until the onions turn golden brown.
  4. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
  5. Now, add the tomato puree to the pot. Cook for a few minutes until the tomatoes are soft and well blended.
  6. Add red chili powder, turmeric powder, garam masala, and salt. Mix well to combine the spices with the tomato mixture.
  7. Drain the soaked rice and add it to the pot. Stir gently to coat the rice with the tomato-spice mixture.
  8. Pour in 2 cups of water and give it a good stir. Adjust the salt if needed.
  9. If using a pressure cooker, close the lid and cook for 1 whistle on medium heat. If using a pot, cover with a tight-fitting lid and cook on low heat until the rice is fully cooked and the water is absorbed.
  10. Once cooked, let the pulao sit for 5 minutes. Fluff the rice with a fork and garnish with fresh coriander leaves.
